Sète: the great gourmet return of the macaronade world championship

Installed all along the rue Général-de-Gaulle this Sunday noon, nearly three hundred guests took possession of the tables and benches to enjoy the famous macaronade. And there was a great atmosphere. The Macaronade World Championship, an ancestral event in Sète, made its big gourmet comeback. In the kitchen, seven candidates had simmered their best recipe for a jury made up of real connoisseurs who were able to taste eight plates of this traditional Sète recipe.

Savvy taste buds

A very good tomato sauce, simmered meat, sausage, chuck and brageoles (a kind of paupiette) all served on a bed of ribbed penne. “Macaronade was the family dish on Sundays, prepared by grandmothers”, says Bernard Touboul. A recipe with unique and family flavors which obviously makes it difficult to convince the jury made up of experienced taste buds. “It has to be visually pleasing, the sauce has to be full-bodied – but not too much – and it has to stick well to the pasta, the meat has to be tender, and then it’s very personal, you have to love it”, declared, with a full stomach, one of the members of the jury. Rudy Cerrato, Nicolas Clément and Bernard Touboul, the organizers, presented eight candidates.

The best of the world

And it’s Emma Caselli who wins the prize for the best macaronade in the world 2022. “I put the right ingredients, I listened to my father’s advice. I added wine and tomatoes to my recipe in just the right amount. I’m very happy!”, declared Emma Caselli, EmMacaronade for the occasion.
