Six month training
Sébastien followed an intense six-month training in Saint-Catherine, Le Mans, to become a cook with all the management of a restaurant behind. And he met in this establishment, Vincent Paulmery, who was training as a waiter. “I took him on board on my adventure and here we are, today, in Conlie”, explains Sébastien, who has a weakness for Italian cuisine.
“She speaks to everyone. It is simple, generous, friendly and family. It is good and remains accessible to everyone. That’s why I chose this path.
His restaurant entitled “A Tavola! ( À table!) was sold out as soon as it opened on November 2. The 24 tables were quickly taken by an audience looking for a nice little trip to Italy while staying in Conlie. The relaxing decor, the subdued lighting, fresh and quality products, everything is an invitation to spend a tasty moment far from the stress of everyday life. “In Taviola!, the freezer is forbidden,” says Sébastien.
His card ? Three starters, seven Neapolitan pizzas, a risotto, three kinds of pasta and three desserts. The boss will enrich it gradually. “The main thing is not in the quantity, but in the quality of the products and the relationship of trust between us and our customers. Moreover, she can, through a large window, see me working in full transparency”.
In terms of prices, it goes from 8 to 16 euros maximum for the wine. “It is very important to remain accessible to all”.
Sébastien also offers take-out pizzas on order.
