Riotord: the La Riboule inn is the first Bistrot de Pays in Haute-Loire

The La Riboule inn in the hamlet of “Sétoux” in Riotord has just been awarded the “Bistrot de Pays” label. Recognition for chef Yann Le Couviour who highlights local products.

Since the summer of 2020, the Auberge des Sétoux has been reborn thanks to a passion for cooking and products. It perpetuates a tradition of hospitality. “He is the third link in the chain”, formulates Chantal Vial who ran this inn with her husband René for 15 years. And before, for 45 years, it was Marcelle and Jean Peyrard who sublimated the products.

In 1993, the gastronomic columnist Jean-Luc Petitrenaud in his book told about these small roads lined with fir trees which lead to La Riboule. “The tables are arranged like a class. But here, we don’t learn to count… but to taste.”

An old fashioned inn

For a few years, the place was less open. But La Riboule takes advantage of being on the Camino de Santiago de Compostela to attract passing customers, deep in the countryside of Riotord, on the border between Haute-Loire, Loire and Ardèche. Pilgrims appreciate the area, mushroom pickers too when they find something to warm up after flushing out natural gold at an altitude of 1100 m in this harsh country.

Yann was an environmental trainer in the Camargue. He relied in particular on the educational tools found on the plate and also cheerfully got his hands on the stoves of traditional music festivals.

The recipe for a Country Bistro

La Riboule takes a new step by winning the Bistrot de Pays label. And as surprising as it may be, in a department that claims its local products and its terroir, it is the first restaurant in Haute-Loire to obtain this recognition. “I have known this label since I was very young. With my parents, we liked to go to the Bistrots de Pays. To obtain it, you have to cook on site, use local products and add a good dose of conviviality” , details the chef who hopes to bring in new customers thanks to this gourmet label.
