Pays de Vitré: the former technician now sells his galettes in his food truck

A sweet smell of sausage patties emanates from the Argentré-du-Plessis market (Ille-et-Vilaine) this Thursday morning when we meet Cédric Desevedavy.

It’s 9 a.m. and the first customers are already leaving food truck with their sausage patty in hand. Behind the billboards of Ma Roulotte à Crêpes, the name of the food truck he has just launched, Cédric is all smiles.

“It was the town hall that asked me to come to the market because there was sometimes a line at Nadine’s The Galette Vitréenne. From now on, we are two pancake makers”, explains Cedric Desevedavy.

From technician to crêpe maker

In his black caravan bought from a traveling trader, where the 45-year-old Argentinian makes his pancakes and pancakes, Cédric has offered himself a new professional experience.

“I was a boiler room maintenance technician in a large energy group. After 18 years there, I made a contractual break. It’s a project I had for a long time. But sometimes, it’s complicated to get started because we are in a certain routine and a certain comfort in our work”, presents Cédric.

After this conventional break, the Argentinian did training at Master Crêpier and Cook School in Rennes. “It lasted 15 days and allowed them to learn how to make the dough and how to cook, especially in their practice restaurant. Then, I followed the mandatory training for this new activity”, continues Cédric.

At the markets and for events

Ma Roulotte à Crêpes is present at the Argentré-du-Plessis market on Thursday mornings, but also at the V&B in Vitré on Tuesday noon where he offers more elaborate pancakes, on Tuesday evenings at Balazé market and finally on the Saint-Germain-du-Pinel market. “I’m looking for other locations,” says Cédric.

Its food truck can also travel for events such as weddings, birthdays or snacks.
