The classics of bistro kitchen and the dishes from our grandmothers. Here is what you can taste at Franquette Bistroa restaurant opened by two friends. Alban and Samson served their first plates on October 25, to the delight of the residents of the neighborhood. With Bistrot Franquette, the two friends realize a dream, that of opening their own restaurant in the heart of Lille. For Alban Lecat, 29, it is a successful professional retraining. After starting out in digital marketing and advertising, he finally got into catering “I had always thought about it because I grew up in this universe. » After a managerial experience in Costa Rica, he took Chef Thierry Marx’s Cuisine Mode d’Emploi training course, which gives the equivalent of a CAP.

Cooking has always been “a childhood dream” for 27-year-old Samson Blasi. He opted for the hotel school of Avesnes-sur-Helpe and specialized in management. “But my passion was cooking. Today, I take pleasure in returning behind the stoves. »

The two friends are therefore perfectly complementary. Opening a restaurant together made sense. But they took the time to mature their project. “We had been refining it for two years, while continuing to work on the side. It took us a while to find a place that we liked, with charm. In the end, it was near the Nouveau Siècle and rue Nationale that the two friends found their lair. Their restaurant is located in a typical Lille house, at the corner of rue du Vert Bois and rue de l’Arc.

Previously occupied by the Handshake Coffee, the premises needed a facelift. Way to speak because, inside, 90% of the decoration is vintage and mottled, like the crockery, the frames, the trinkets. “The seats come from the former Petit Quinquin brewery in Tourcoing. Otherwise it comes from Le Bon Coin, the Braderie de Lille, the cellars of our grandparents”, explain the founders of Bistrot Franquette.

The great bistro classics

This old-fashioned side of grandma’s cooking can also be found on the menu at Bistrot Franquette. “Our grandmothers inspired us a lot. They made large tables with stews. And us, it’s the cooking that we like to do but that we had trouble finding elsewhere, ”explains Alban.

So to be sure to design quality dishes, the chef has chosen to source “exclusively locally, and as much as possible around Lille. We work directly with producers. And for some, we met them in markets. For the rest, the duo trusts Fruits de la Terre, a market gardener who liaises with small local producers.

With exclusively fresh products, the Bistrot Franquette menu is therefore short, a guarantee of quality. There are always essential dishes such as egg mayo, roasted leeks with vinaigrette, or even the house specialty, the truffle croque like French toast. As a vegetarian dish, the friends imagined rice croquettes and small vegetables, with a mushroom sauce.

Every lunchtime, a dish of the day inspired by grandmother’s cooking will be offered. Like for example endives with ham or blanquette. And very soon, the two friends will prepare their own country pâté. “It takes a long time to do,” says Alban.

For desserts, Samson, the sweet specialist, gives free rein to his imagination. The suggestions can thus vary very often, “depending on my inspiration and the products of the moment”. This fall, apples and nuts will therefore be highlighted in succulent pies.

Dishes served throughout the day

The bistro spirit is also present in the operation of the establishment. Also, it is open continuously, from noon to midnight, even when the other restaurants in the area have finished their service. This allows you to eat a quality dish at an affordable price, without going through the fast food box.

As the place has License IV, it is also possible to come just for a coffee or a drink with friends. Three draft beers are available (organic Ginette, Kwak, Tripel Karmeliet), bottled beers (Motte Cordonnier, Duvel, etc.). Fans will also find wine, cocktails (two classics, two signature). And who says bistro, necessarily says Picon Bière and Ricard!

Soon, the two friends also want to organize events, such as “Disco Bistro” evenings on weekends. “We would also like to bring in musicians on weekday evenings, or highlight local creators. We can leave them upstairs to settle down. »
