“With his wife Martine, Laurent has just formalized the transmission to his two co-directors to devote himself to other personal projects. There is no break, only continuity with the desire to go even further,” he told AFP.
Long-time collaborators, Thomas Lorival and Franck Derouet, respectively executive chef and sommelier/dining room manager, signed the compromise on the sale of the business on September 29th. That of the walls is planned for a second time, according to the same source.
“Thomas and Franck will become the sole partners of the company, without investors. And this is undoubtedly the first time that a three-starred House has been passed on to such a pair”, we were still assured.
Native of Haute-Marne, Laurent Petit had bought their restaurant with his wife in 1992, at the Annecy commercial court, before obtaining a first star in 2000, the second in 2007 then the third in 2019.
“2022 then marks a double anniversary, that of the 30th anniversary of Clos des Sens of course, but also the 40th anniversary of the Chef’s profession,” said Laurent Petit’s entourage.
Le Clos des Sens is one of the only two triple-starred restaurants in Haute-Savoie along with Emmanuel Renaut’s “salt flakes” in Megève.
