The recipe for caramelized French toast from Philippe Etchebest:

Ingredients :

  • 2 egg yolks
  • 30g caster sugar
  • 20 cl of liquid cream
  • 2 cl of milk
  • stale bread such as brioche, sandwich bread or baguette
  • 1 tablespoon brown sugar
  • 20g butter

Preparation :

  1. Clarify your eggs separating the yolks from the whites. Blanch the yolks with the 30 g of sugar, whisking vigorously. Add the cream and milk to your device.
  2. Slice toast from your stale bread. Remove the crusts. With a cookie cutter or a glass of the same diameter as your ramekins, cut circles in your slices.
  3. Butter the inside of the ramekins and fill them with a small ladle from your device. Place your rounds of bread inside. Add a small ladle of your mixture again.
  4. Reserve in the refrigerator until the bread absorbs the liquid well. You can even perform these operations the day before. Your French toast will be even better.
  5. Bake about 15 minutes at 170°C and let cool.
  6. In a skillet over low heat, make a caramel with brown sugar and butter. Place your unmolded french toast and coat them with caramel.
  7. Accompany with whipped cream or whipped cream and enjoy!
