“I would never have thought of opening this type of restaurant”, laughs the young Albigensian Mathias Groc. Loyal customer of eat salad when he lived in Toulouse, the 29-year-old recently opened the fast food chain’s first establishment in the Tarn. And of course, he chose his hometown to launch this great adventure.
More than ten years of experience
After several experiences in the field of catering, Mathias decided to start by becoming a franchisee of this chain launched in Bordeaux in 2013, in the business district of Mériadeck.
“I wanted to do something in fast food, but I also wanted to have a project in tune with the times,” he explains. This is why he identified this concept of salad bar where it is possible to completely personalize your dish. “The quality of the food was essential for me”, specifies the one who offers a range of nearly 40 ingredients (Arugula, lettuce, bacon, emmental, cherry tomatoes, poached egg, tuna, Mozzarella…), 11 bases and 10 sauces in his establishment.

Significant expansion in Occitania
As it continues to grow throughout the territory (more than 55 restaurants), EatSalad continues its clear expansion in Occitania by investing for the first time in Albi. Before that, the Bordeaux brand had put down its suitcases at Toulouse, Balma, Blagnac, Montpellier, Montauban or Carcassonne.
“It’s a concept that is very popular,” explains Mathias Groc. The first feedback from Albigensian customers is also very good. Proud of this restaurant, the young Albigensian shows enthusiasm when he talks about the next few weeks of opening. “I hope that the Albigenses will come to visit us,” he smiles.
