Eating all raw foods can be dangerous for your health.

Best friends of a healthy diet, raw vegetables are renowned for their various virtues and the vitamins they contain. If a good number of vegetables are eaten raw in salads or as an accompaniment, this is not the case for all. And you have to be careful, because the problem is not just a question of taste… but of food toxicity. Some raw vegetables would cause intestinal disorders, headaches, bloating or food poisoning. A list to remember.

1 – Potatoes

Potatoes contain solanine, a potentially toxic substance. Heat resistant, it is still better to peel the potatoes and remove the green parts before eating them.

2 – Green beans

Raw beans (green and wax) contain phaseolin. This natural toxin causes blood vessels to clog and disrupts intestinal digestion, even causing vomiting. This poison is destroyed by heat during cooking, therefore it is necessary to cook the beans for at least fifteen minutes. The cooking water can be reused because the toxin does not diffuse into the water.

3 – Eggplant

Eggplant also contains solanine, mainly on the green parts and the peduncle. It is therefore best to cook eggplants before eating them. Also, raw eggplants usually don’t have much flavor.

4 – Cassava

Cassava contains cyanogenic glycosides which, when raw, release cyanide. Better be careful!

5 – Red beans

Kidney beans contain phytohemagglutinin. This toxin causes gastrointestinal upset, so consider cooking them.

6 – Chickpeas

Raw chickpeas contain phaseolin. For dried chickpeas, soak them for at least twelve hours in water, then cook them for two hours. For canned chickpeas, they are already pre-cooked, so they can be eaten directly.

7 – Flour

If you dip your finger in the flour while baking a cake, you better break this bad habit. Raw flour can contain pathogenic bacteria, including E.Coli which can cause food poisoning.
